Being a coffee professional is probably the best career choice I have ever made. Having started in London as a Barista, then Head Barista, Cafe Manager and Coffee Trainer, I quickly realised that what interests me the most is the speciality coffee and the process of selecting the best beans and roasting them to ensure their highest quality.
Since 2013 I have been running Coffee Cupping UK - regular meetings for roasters and London baristas and open to the public, aiming at judging coffee and networking with coffee professionals. At Coffee Cupping UK each month we chose coffee in such categories as “best of the best” and “crowd pleaser” and the cuppings were organised according to SCAA standards.
All that experience further developed my sensory skills and helped me understand factors that are influencing the flavour of the roasted coffee beans.
Through extensive studies, working closely with roasters, attending classes and in general getting more and more into the industry, I had eventually become a coffee roaster and my first task was to set up an entirely new roastery. During that time, I was responsible for every aspect of creating and running a roastery, from sampling and ordering beans through inventory management to dispatching and marketing.
In 2015 I was selected for Coffee Masters competition in New York to compete in six different coffee categories against 19 selected coffee champs from all around the world. In November 2016 I won 3rd place at UK Roasting Championship.
At the moment I am roasting coffee under my own brands Molecular Coffee and Dobre Ziarno. I am also freelancing as consultant for roasteries and coffee shops, while still keeping part time job as Barista.
For me coffee is about a constant search for the perfect taste, exploring all the notes: floral, citrusy, chocolate, nutty etc. I love to taste and evaluate coffee and I am constantly researching, learning and upgrading my coffee skills.
In the near future I would like to become a certified Q grader and certified AST roasting and barista trainer.
